Try adding bleach to vinegar in a plastic 2-liter bottle, taped to another 2-liter bottle upside down. you can swirl it around and the vortex is pretty sweet

Again, it WOULD work, but much much much slower than with an acyl chloride or an acid anhydride.

As you can see, carboxylic acids are pretty unreactive (I believe due to ionization/resonance stabilization/dimerizing between molecules).
