Doesn't the fact that quantum systems can exist in a gravitational well such as a neutron star or here on earth disprove the idea that gravity could be quantum in nature?
If gravity was quantum, every interaction of particles with gravitons would be equivalent to a measurement and break any form of superposition.
Am I wrong in assuming this? What do you think?

Yes you're confused about how superpositions get broken. The interaction needs to be strong enough to entangle the graviton with the thing it's interacting with it.

More precisely, the superposition only gets "broken" only if the state of the system after the interaction is [math] |g_1 \rangle |s_1 \rangle + |g_2 \rangle |s_2 \rangle + \epsilon [/math], where g denotes the graviton and s denotes the system. Even more precisely, the superposition is never broken, but in the case above, it can be approximated as though it was broken.

Particle interaction is not an observation, as per the axioms blurted out by Von Neumann. Observation isnt perturbing some ultra pure system, but observing it. Dont argue back, accept Von Neumman's idea

Breaking superpositions exactly is something which just doesn't happen in quantum mechanics. To make something like that possible, the framework of quantum mechanics has to be replaced by a theory which considers wave function collapse to be an actual occurrence and not just an approximation - such theories are called objective collapse theories.
