Yeah, because that's the definition dumbass. If you want to define some sort of 'extended primes' that include 1. feel free. It's just that 1 is boring as fuck and putting it with other primes causes problems (all natural numbers no longer have exactly one unique prime factorization). 1 being a prime is detrimental to any serious study and application of primes, so we require that it isn't. It is. Because when you're doing combinatorics. It's a better answer to say that the number of ways to arrange 0 things in 1 way rather than in 0 ways, which means you can't arrange 0 objects (obviously less intuitive because 0 objects are always arranged in their one state of non existence). Also approximating factorials for reals is way better when 0! = 1.

when you do problems in combinatorics, you will see just how much this simple assumption helps. What could leave you banging your head against a wall for hours (even if logically consistent) would become a breeze. Again, there are applications where assuming.

Also think. if you assume 0! = 0, then 1! would be 1 x 0! which would be 0, obviously untrue. So, 0! = 1 is just a better extension. Conventions are chosen for a reason. Some people believe that 0! = 1, shouldn't be a called a convention, but rather a mathematical fact for the reason i just said. But i disagree with them atleast. There are logical ways to make 0! = 0 work, but it does require some unintuitive assumptions.
