Scientifically speaking, why is it possible for someone to be completely normal one day, and then the next day spiral into a perpetual state of schizophrenia unprompted? Also is it reversible

I once entered a psychosis after eating lasagna I made from scratch, including making the noodles from flour and egg. I believe there was some sort of fungus or mold in the flour.

There are certain organic neurological diseases that may present with psychosis, such as Huntington's disease and anti-NMDAR encephalitis. The cause of schizophrenia is not known but twin studies and GWAS indicate a substantial genetic contribution.

food allergies. after a major car accident and surgeries i developed bad mental health issues, and a lot of digestion trouble. fast forward years, lithium, meds, etc, all i have is gluten allergy that seems to have been brought on by high stress, the accident, because after that is when all the trouble started. been gluten free years now, and mental health is stable, no meds. scares me to think how insane i can become by just eating bread, i get skin rashes, eyes bulge, insane brain, horrible shit. and its all kept in check being gluten free. called celiac disease. so food allergies, once they hit a tipping point can make people insane.

That's not what happens.

People with mental issues manage them every day. Some manage them exceptionally well and can live a normal life while suffering underneath. Eventually they fail to manage and control themselves, and everything things they fell apart overnight. In reality schizophrenia specifically is a slow spiral that gets worse and worse as you get older, but some people keep up with stronger willpower and management skill and medication so it never shows.

You’re probably right actually. I had really bad acid reflux for three days straight and then the psychosis came. It must have been a digestive fluke that’s still lingering
