This bacteria experiment here is a good example, normal E. coli bacteria always had the ability to eat citrate. But they will turn on and off that ability depending on the enverionment. In the enverionment this scientist created this ability was lost - resulting in a 'new' species that will always eat citrate regardless if the enverionment is aerobic or not
