I just realized that every depiction of gravitational curvature I have seen depicts NEGATIVE curvature. What gives?

Take picrel for example. You start with a flat space. Introducing positive curvature at a particular location (green) implies creating a ring of negative curvature (red).

I'm not incorporating time here so maybe that would solve the problem?

Yeah it's supposed to look like picrel because spacetime is affected in three dimensions and not a flat plane. I think the flat plane is just an analogy but it's a misleading visualization

You know full well gravity is AROUND the entire planet. Assuming just that one piece of information, it will tell you that gravity is curving space in a sphere.
