the 2nd law just says that all matter will assemble into the lowest possible energy configuration.

However, large pieces of matter can thus assemble. A protein IS the lowest possible energy configuration, despite being large and ordered. Thus, it can stay together.
And even a cell is a lowest possible energy configuration, being efficient at what it does.

It would be false to say that the 2nd law means we must have 'chaos'.
