this is incredibly dangerous to do because ostriches have very flexible necks and are notorious assholes. scenes like this picture are very uncommon because most ostriches would rip their rider's face off for sitting on them.

selective breeding is necessary to create a bird that cannot peck your face off while you sit on them.

It's arguably possible to create some Chocobos.
Artificial selection on Ostriches already does half of the work, but you'd have to increase the size a good 40%, and find a way to tame those goddamn birds naturally- Chocobos are NICE, Ostriches are FUCKING ASSHOLES.

you keep a population of ostriches, maybe 100 or so. every generation, you take out the 1/3rd of all based on all the different criteria. these would be color, temperament, size, and fluffycuddlyness.

so all you do is remove the 33 angriest, baldest, smallest, least yellow birds every generation. after enough time you should have chocobos
