I wanna understand the structures that govern the universe and space-time, what should I be studying? Maybe General Relativity and Topology? Quantum Mechanics? Philosophy?

I just wanna know the ultimate truth of our universe and why we are here and I think that by understanding time itself I can find an answer.

There's either Oxford, Harvard, Cambridge book publishers.. one of them I forget which will bundle all the relevant papers on a subject and they have one for 'Time' something like 13 papers in the book (you can use library genesis).

Definitely start with relativity. (Make sure you have a good handle on special relativity before diving into GR)

You're still left with the Time's Arrow problem though. (All physics models except thermodynamics work just fine backwards or forwards, and noting that entropy always increases isn't actually explanatory)

After that, probably philosophy and cogsci to attack from the perception angle. Linguistics wouldn't hurt either, we operate with a ton of temporal assumptions embedded in the language.

GR is a good start for at least giving you a very different (but compatible) intuition about time. I would try to learn it from someone who presents it in a rigorously mathematical, yet philosophically inspired manner (as opposed to pop-science factoids, or engineering-style focus on equations)
