Depends on your school, but signals and probability were considered the toughest classes in the EE department (EM waves wasn't mandatory). I got an A in signals and now am doing well in my EE masters.
You're probably among the upper crust of your undergraduate class so congrats.

I'm glad I kind of enjoy that kind of math. But would it be worth it to take a class in Fourier analysis in the math department? I want to do research in systems and signals but I am not sure what specific thing I want to do yet.

You’re probably better off taking ECE classes. Signals and systems is very important in many aspects of ECE such as controls, DSP, analog circuits, and communications, and you’ll learn the necessary math as you go.
