What degrees will increase job opportunities and what degrees are going to waste my time? I’m interested in physics and literature, both of which I’ve heard have no jobs.

Any degree will have "npc" people. Realize that like 85% of scientists to have ever been alive are alive today.
If you put something on a pedestal you'll just be disappointed, you'll find a smart autist in whatever subject you pick. And just a bsc is enough for entry level jobs, just pick what you want.
