I was trying to explain Combinations and Permutations to someone about a month ago. I could not adequately explain this, although i know how to work them. Could someone explain the concept behind them in accessible terms, for my own piece of mind?

Order doesn't matter in combinations.

if we take 3 fruit from a bowl, then Apple-Pear-Banana is a different permutation to Banana-Apple-Pear. Yet it is the SAME combination.

No, those are called permutations. That's the only difference between the two words, order matters with permutations.
abc and cba are the same combination of letters from the alphabet, but they are different permutations.
