Most likely, it will not be "humanity died out", but that we as as specie will change. Search for "bronze age collapse". There was quite advanced civilizations in mediterran area at time, but only Egypt survived. For most of other, was significant technological regress. There will be no second Great Depression and the economy will keep growing as if infinite growth has finally been achieved. Then one day, when urbanization hits the peak and pretty much everyone is entirely dependent on 20 different supply chains to survive the month, the peak oil panic will finally happen and the price of food will double on a monthly basis, making it completely unaffordable for many of the urban citizens. No one would want to live in an urban environment of abnormal food prices and the whole real estate sector will crash. The expensive energy will in turn make every form of manufacturing unprofitable and no amount of QEs will ever solve this issue, annihilating the entire rest of the economy.
There is no escape from the oil exhaustion and no, fracking is not economically feasible. Yes, there's quite a lot of oil and gases in the ground but the infrastructure needed to be built to get them out of there is much more expensive than what we can afford or even could afford, even if we had an economy twice as healthy as this one. Nuclear energy is still not feasible and green energy has an even sadder EROI. Fusion is insanely unfeasible and will continue to be that way until the end of this century.

To finally answer your question, humanity will kill itself by having nations starved of cheap energy revert to outright plunder and military colonization for nothing else but to prevent their own collapse. Europe doesn't produce oil, Europe will have to pull a Hitler 2.0 and annex Russia for real this time. China is in an even worse condition so you can only imagine what the then-superpower would decide to do to prevent a complete collapse. America will lose its influence in the Middle East ending the "petrodollar" which along with the unfeasible fracking, will force them to turn imperialistic.
In that environment, one bullet fired by a mistake can end in a complete nuclear annihilation of Earth.
