how good of a mathematician was he really now that we know he didn't actually design the "Von neumann architecture"

He was probably better computationally than anyone who's ever existed.
He came up with game theory.
He formalized much of pure mathematics.
He was one of the founders of propositional calculus, which leads into quantum logic.
He applied mathematics to various fields such as economics.

He was basically autistic enough to go into pure math and construct the foundations of mathematics, and was also smart and creative enough to apply math to more fields than probably anyone.
The biggest reason he is not considered greater is his early death.
Although he would say Hilbert was better, von Neumann is likely the best mathematician of the 20th century, and he's the last mathematician to contribute greatly into both pure and applied math.

Sorry no. Multiple researchers had formulated basic games before Von Neumann. His claim to fame in economics is with Morgenstern on using expectations to determine the value of lotteries.
