C++ is only good for embedded development. Other than that, not that many C++ shops left anymore. Python is a good choice. Or C# or java. Project ideas are countless. Do something simple. For example a weather app. Or a shopping app. If you are EE, write a caclulator. Here is what I did in literally a week. Biasing transistors. This is C# windows forms, it is kinda obsolete but it doesn't matter. It is easy to slap a few controls on a form and then implement the logic. This is the first step, just to learn the language. Then you should try some web project since that's real life work. Everything is web development these days. Learn some framework like dotnet core and learn how to write simple full stack RESTful apps.

I went to my school’s career fair this week. Honestly unless you have a shitton of experience and are talking to small companies (that you have done research on prior to going to the career fair - they expect you to know everything about their “values” before introducing yourself) you’re better off just applying online. In fact, most large companies will tell you to apply online no matter how well you talked to them in person.
Career fairs are really only useful if you’re wanting to work for local/semi local startups or small engineering firms. I know many people who work at google, microsoft, ibm, etc., and never once went to our school’s career fairs, which are apparently the largest in the Midwest.

But yeah, haircut, shave, tailored suit, resume holder, and knowledge of the companies you’re talking to will help.

Some schools have programs specifically geared towards defense contractors, at my school they are often hired on before graduation if the GPA is good. You might want to rewrite your resume to reflect the attributes they're looking for from a similar program. Talk a lot about hands on experience, troubleshooting, test equipment, and then whatever systems you know they're using for the job, like radio, radar, power supplies, unmanned systems, etc. Focus more on the technology and application since that's the biggest part of a contract, less emphasis on theory and math, at least until you're working on design.
