why does 1+0 = 1 and 1 - 1 = 0 but 9+1 isnt 11? base 10 doesnt make sense its illogical 10 doesnt appear to be a real number and shouldnt exist it should be an 11 and 11 should be 12 and 9+9 should be 19.

What the fuck? 10 is one greater than 9, that's why. Decimal arabic numerals are of the form abc...xyz where the value of the number is equal to a*10^n+b*10^(n-1)+c*10^(n-2)+...+y*10+z. The coefficients are the digits in the number and n is how many digits there are to the left of the decimal point. It makes perfect sense, you are just digging too deeply into terryology.
