Inbreeding effects end after one generation of outbreeding. The problems are caused by runs of homozygosity between pairs of chromosomes. Presuming your father isn't related to your mother there won't be any runs of homozygosity.
Futher, like everyone said, 2nd cousins barely share any DNA.
