Why is science so restricted by ethics but day to day life is not? Why do we look back on when science was restricted by the church and think it was oppressive but now when we restrict science with the same judeo-christian values we call it "ethical"?

because it was restricted for different reasons, like suppressing truth to maintain power. today there are restrictions to help people.
when there are no such restrictions, you get things like Unit 731 (google it)

Billions of animals live in hellish conditions on factory farms but if you did a scientific study on like 10 higher level animals (say pigs for instance) you have to follow a million ethical guidelines all of which severely limit your procedures and by extension the potential outcomes of your research.

Consider for instance if vaccines were conceptualized with the same ethical standards and limitations today, the idea of injecting known harmful bacteria into people sounds incredibly ethically suspect and could reasonably be shot down as unethical. Of course, we know now that vaccines are (at least in the context of the concerns I mentioned) safe, but what is the next milestone that we aren't allowing ourselves to investigate?
