So I'm in my 3rd year of my physics PhD and decide I hate scientific research in academia. It's fun learning from all the textbooks the main ideas in a field, but after that it feels mostly like a bunch of people arguing about irrelevant details that go nowhere and wasting tax-dollars.

I'm thinking of bailing and doing a Masters and then just selling out as hard as possible for awhile. I want to go back into physics eventually, but more on my own terms with enough money to do whatever interests me and not have to keep up with research I don't care about.

What job is the best to sellout with, and is at-least intellectually challenging so my brain doesn't rot?

No, it's the opposite. The intrinsic value of an activity determines how many slips of paper printed by the government you receive.
