Same as what I was thinking about essentially: there are probably more math professors in lowering paying positions at lower-grade institutions, at which gender and ethnic courses may not be offered. I would have mentioned the fact that many public school math instructors are paid a pittance, but then I noticed that they specified "professor." A better metric I think would be, for each professor, their pay minus average pay for their level and institution, and then the average or median taken for math versus gender/ethnic professorships and compared.
