This equation only works when you make the initial assumption that all fractions must be definable.
If we change the rules, sure, 0=1. If we go by conventional mathematics however, which doesn't treat 0 like any other number. It doesn't work.
If I define infinity to a set value, yes, there are a ton of silly equations I can write, and they'll be true, but that doesn't make me right in all cases.

Zero times any number is zero because zero means a lack of. A lack of any real number is a lack of anything. Therefore division of a nonzero by 0 is impossible by the definition of division. There is no way to multiply 0 enough times to get to a nonzero. Additionally, division of zero by itself is meaningless because it is equivalent to any real number and thus is not a unique value nor a function. If you used this logic to create a graph of the relation yx = 0 then you would simply have created a system of coordinates rather than an actual graph. You would never write the notation y=0/x because it implies that y is a unique value and thus y=0 for all x=/=0.

Go into wolfram alpha ind try inputting xyz = 0 and notice how it gives the graph of its own three dimensional system of coordinates (albeit in an odd sort of planar form) while xy = 0/z is total nonsense. The computer can't even figure out how to restrict the domain to z=/=0 and gives a useless two dimensional subspace geometry because a lack of anything will always be a lack of anything no matter what you divide it by. God would never have created the universe with such an imprecise and unmanageable equation.

TL:DR;
nonzero/0 impossible

0/0 could be anything or nothing at all; can't be proven either way so it is avoided by mathematical tradition
