It takes me a very long time to come up with solutions/proofs to exercises in higher math books, such that I would most likely never be able to crank them out under a time limit. Some I'm completely unable to do at all and have to look up. This hasn't improved significantly over several months of self-study either. Am I right in thinking that I'm too limited to even bother trying to do a math degree or something math-heavy like physics?

Nah. A lot of shit would take a hilarious amount of time without solutions manuals especially if you don't have a firm foundation and especially if the text introduces knowledge in the solutions to problems themselves. I'm a Physics major and everyone uses solutions manuals to the point the professors have just accepted it.
I mean fuck am I really going to research a problem for days just to be like OH SHIT FOURIER'S TRICK OF COURSE! Then I would be fucking Fourier.
Of course if its been months of self study and you still can't tackle problems of a similar calibre that you started on and its not because you're not aware of the techniques at play, but its because your logical faculties or problem solving skills are lacking then it is possible this isn't for you.

a lot of education is introducing students to material little by little so they're not overwhelmed
I think most people come across a problem they can't figure out once in awhile, usually there's some kind of trick they don't see
