Pretend lightsabers are real. What would really happen to Luke when that lightsaber sliced through his hand? Would he feel instantaneous pain? Would the stump bleed? Or is the move pretty realistic in how that is depicted?

There maybe a delay due to shock before the pain really hits him, but lightsabers aren't particularly precise tools (think the blast door Qwi Gon stick his lightsaber into and melted around the lightsaber) so it will definitely cause damage to the stump, cauterising the wound perhaps, which will trigger an assload of nerves.
Yeah, it'll hurt like fuck. Perhaps crying out was too soon, but it could also be explained by reflex, like how you say "ow" when you bump into something before you realize it didn't actually hurt. Because you see it coming you react automatically before actually analyzing it.

according to some star wars novel i read when i was 9, the lightsabers cauterize the wounds, hence no bleeding. use that hypothesis as you will, it may be a cannon explanation, but who knows what the actual logistics of these things would be.

Pretend something fake is real. Answer my question. Well assuming biology is the same you'll have severed nerve endings so yes it'll hurt. Pretending you're magic is real, it may or may not rant be an issue and he could probably use the force to prevent the signals from getting to his brain but he's not that sophisticated. Plenty of other things you could do if you pretend magic and fake toys are real too.

Because 90% of the muscles and tendons that control your hand are located in the forearm and it's easier to just have a plug into the nerves than connecting each and every surviving tendon to a mechanical tendon in the hand.

Adding to this. High temperature plasma is unpredictable. It may burn through tendons or flash boil blood. It wouldn't be a constant wound, but pretty ugly with fragments of gore. They would have to cut this all off to find good tissue to graft to.
