Why were scientists in the past dressing so much more fashionably compared to modern times? All these guys have tailored suits and look fit for their age.

The job held more prestidge, also there wasn't fast fashion. Likely, all their clothes were obtained by going to a classically trained tailor and getting something made to fit. They probably wore the same things more often. Also, they're probably fit because families had to cook their own dinners for the most part. Less processed sugars, fats, and convenience food. Maybe they even went a tad hungry, that's what I do when my wife makes a dinner I don't like.
