No, it really does matter because undergrads with the same exact grades as you will have more research, better training, likely come from wealthier families and could afford to take more unnecessary but beneficial additive courses and will have recc's from elite undergrad instructors whereas you will have recc's from nobodies from State flagships or worse. They put a lot of unnecessary stress on just to be 'elite'; so they cover a fucktonne of topics very quickly (in Natural Sciences, I did phys, materials science, compsci and the harder maths course (you pick one of two)); each one could be a single course at any other uni.
By the end of the first year, you forget everything so it's all pointless, aside from the meme of 'Giving you opportunities to consider subjects that you might not have heard of'. The lecturers and supervisors (The supervision system at Cambridge is how you'll do most of your learning), are for the most part pretty good, but depending on the kind of person you are, you might struggle to get along with your peers, especially if they're the elitist type (or worse, feminazis).

I have no idea. I've only been to one uni, but the impression I get from my friends that got to Birmingham and Liverpool is that they're stuck in the mud.

The best proxy for that is research output. If a uni has more innovative, cutting-edge, high-profile researchers, that sort of mindset will filter down to the course level, since they're the ones directing and teaching the courses.

Edinburgh is ranked highly for research, but low for student satisfaction. So you'll be getting a great education, but people won't hold your hand through it.
