Should I go vegan just because my country refuses to test cattle for prions? How worried should we be about infectious prions?

Well, you can just cook your beef really well if you are that worried about it.

I’ve heard that prions can survive temperatures over 1000 degrees.

If that is accurate, id be worried as fuck if I lived in the US.
Cooking your meat wont save you. There is no cure once you have it, only a slow deterioration of your brain into certain death.
And it takes years for the symptoms to manifest them-self, so you wont necessarily be able to see it happening to people around you before it has spread largely, if they are covering up its spread in cows.

Anything that causes brain deterioration is so scary too me. Especially when there is no cure.

All cattle have prions though. You have prions too.

https://en.wikipedia.org/wiki/Prion#Role_of_prions_in_Transmissible_spongiform_encephalopathies
>The cause of the Transmissible spongiform encephalopathies (TSE) is currently unknown, but the diseases are known to be associated with prions.

Prions might not be the cause so best not to worry about them too much at this point. The likelyhood of getting TSE is extremely low. Worrying about the connection between the food you eat and diabetes, heart disease, alzheimer's, dementia, autoimmune disorders, gut problems etc. would be much more useful.

don't eat sausage.

if you're really paranoid, buy beef from a local farmer who doesn't feed his cows offal. grass-fed beef is supposed to have a little better fat profile with more omega-3.

but mostly stay away from nervous tissue.
