There is some truth to this, for one all the public nutrition models are highly bullshit created by the industry not from any scientific model. There is also some truth in combining some foods will enable or disable the nutrients of another, such as filling your face with sugary carbs will require more Vitamin C as they compete for resources. That said there's PhDs being paid to prepare highly optimized nutrition plans for pro atheletes so some kind of model exists that isn't bullshit.

there is general nutrition that is true for everyone, like a very one-sided diet is definetely bad for you. So have a somewhat good mixture of everything and you should be good.

Then there is highly-optimized nutrition plans that can not be designed for the general public, because the way food gets processed is a very individual thing, e.g. every body has a different "optimal" diet. So pro athletes are getting one of those, because they can afford a personal nutrionist, but a normal bloke cant.

Without looking into this, I agree with this to a degree. People have an arbitrary view of "healthy food" and "non-healthy food". "A salad is healthy because....people told me".
A sloppy fast food burger can have the same exact nutritional value as a "healthy salad". You could live your entire life off those burgers assuming they met your daily needs. To top it off, in almost every first world country, you get way more than you need in daily nutrition. Therefore, the average person doesn't have to think about it.

You just need to watch total calories consumed and their macronutrient breakdown. Rapid consumption of large amounts of simple sugar is known to cause a spike in blood insulin levels, which leads to insulin insensitivity and obesity, but there's no mechanism for discriminating between 800 calories of sugar from organic non-gmo brownies and 800 calories of soda. Salad (even without dressing) is not intrinsically healthy. It's "healthy" only in the limited sense that is has very few calories, and you are less likely to overshoot a daily quota by adding a salad than you would by adding a burger on top of the same diet - not in the sense that replacing X calories of burgers with X calories of salad is in any way better for you.

It's not a minimum threshold to clear, it's a range to fall into. Say one food gives you 100% your daily amount of some nutrient for about 5 calories, but that nutrient is common in many other foods you eat and you end up overshooting by a wide margin. Is that food "good at giving you a good diet"? It inherently depends on how you use it/what you eat with it.
Besides if "contributes significantly to one or more quotas which need to be met without harming your other quotas" is how we choose to define healthy food, then multivitamins are the healthiest food of all.
