well I know there's a Mythbusters episode where they make their hands wet and then put it in molten (300°C) lead. In that case, the vapor over your hand surface protects you from burning as long as it's there. Might be something similar. If the hot stuff doesn't stick, you're good.

The thin barrier of water and oils on his hand are sufficient to protect his hand. Heat transfer takes time.

But be careful.
The standard demonstration is to flick a hotdog in and out of molten lead.
If the lead isn't hot enough it freezes and prevents you from withdrawing the hot dog.
This does the hotdog no good and would do your hand even less.

The temperature gradient needs to be steeper. The moisture on the hand needs to nearly instantly vaporize, this will form a vapor barrier around the skin that will insulate the skin for a very short period of time. If you touched someone for a fraction of a second and it burned you, it wasn't hot enough for the effect to occur. This is dangerous and do not try this with your body parts at home. Put water in a hot pan or something instead

You can slap your hand against super hot things and not get burned as long as the duration of contact is super short. Heat takes time to transfer.

You get burned from grabbing a pot because youre grabbing it.

The flow of molten metal isn't sticking to his hand, so I guess the liquid metal is flowing too fast and doesn't stay in contact with his skin long enough to transfer enough heat to burn his hand. Also, by slapping it, the amount of metal that effectively is capable of transferring heat must be minimal.
