I'm interested in biology, zoology, entomology, paleontology, etc. but from what I have been reading, degrees that focus on these areas (organisms and sheit) are worthless.

Get a degree in Geology
Paleontology is extremely important to companies as index fossils are vital for identifying rock layers that can be used to find mineral resources and oil.

I won't lie to you though. Most important index fossils are microscopic but you'll have the education you want and the job you need to earn money

Oil companies dont do this anymore. Havent in like 30 years. Paleontology is pointless unless you want to do research, but thats not a real job, and you have to be good at it

I have a BS in Biology, an MS in Zoology, and a PhD in Biology. I'm currently employed as a postdoctoral scholar at a very large public university, and my research focuses on exactly what I'm interested in.

I had to work my ass off to get here. I might not have had the best grades or publication record, but ultimately it's the quality of your science, work ethic, and networking abilities that will land you a job you're interested in.

All that goes to say - the degrees you mentioned aren't worthless and, at least in my case, have resulted in employment in the field I am passionate about.

Networking is considerably lower than that in terms of importance. You might know everyone of importance in your field, but you're basically unemployable if it's known that your science sucks, you're difficult to work with, and you don't pull your own weight.
