Can someone give a brief explanation of the string theory and quantum mechanics. I often hear those terms in big bang theory but i have no idea what they mean.

Quantum mechanics is a way of calculating how tiny things like atoms and subatomic particles will act, like how mechanics lets you work out how regular sized things like balls and weights will act.
The name comes from the way properties at that small scale seem to have discrete "quantities" rather than a continuous scale - like having the temperature suddenly jump between 30˚ and 31˚ instead of smoothly rising.

String theory is the idea that subatomic particles might actually be like tiny loops of string instead of dots. Every loop of string is the same, but the way they vibrate makes them look like all of the different particles to us.

does string theory describe gravity

No, but it does predict gravitons.

In the same way the rules of chess don't describe the really common opening moves, but you can use them to predict what people will commonly do.
