What STEM subject is the easiest for self-teaching? I'm interested in STEM stuff but I'm not majoring in it, nor am I going to change my major.

Chemistry has the problem you won't be able to do much lab stuff at home, otherwise should be easy. CS is the easiest one for self-teaching.

You can teach yourself anything if you're dedicated. I learned chemistry and biology on my own after not giving a fuck about them throughout high school.

biology.
Biology textbooks are basically just story-picture books.

Easy to read through once and understand as light reading, like basically any humanities or art subject.

Biology without labwork is pretty dull and pointless. Unless OP wants to get into bioinformatics, which again is a bit pointless without access to a cluster.

Stick to a theoretical subject, unless you want to read text books describing results from experiments someone else did 30 years ago.

Definitely programming.
1. Tons of tutorials and stuff online
2. Instant feedback
3. Easy to practice on your own.

Who cares what's the easiest? Find something that you want to learn more about and then learn more about it.

Probably some sorta science rather than pure mathematics.

I would imagine engineering.
