What STEM subject is the easiest for self-teaching? I'm interested in STEM stuff but I'm not majoring in it, nor am I going to change my major.

Biology without labwork is pretty dull and pointless. Unless OP wants to get into bioinformatics, which again is a bit pointless without access to a cluster.

Stick to a theoretical subject, unless you want to read text books describing results from experiments someone else did 30 years ago.
