Engineers are extremely useful for the Space industry - How do you think they design those launch platforms?

I'm a Physicist and I'm quickly learning that Engineers have a lot more choice in the Space job market than I do

This is a good example for cosmology. For space flight applications, you can work on space center or launch site facilities. And for more ambitious applications, a quick google search brought up space hotels, or you could design muh moon base. You can certainly find something.

What are you even talking about? Space industry is all Aerospace Engineering with some EE and barely any Physics PhDs. Only departments where there are more physicists than engineers are government funded projects studying astrophysics data or similar. All spacecraft design is done by engineers for legal reasons.

This. OP take more solid mechanics, structural analysis, and finite element analysis courses. Skip those elective classes on slope stability or highway pavement design if you must.
