Intelligence seems to be a function of having a complex brain. Chimps exhibit some form of intelligence that can be comparable to humans. My cat is pretty smart/resourceful.

I would say intelligence is being able to use your brain "intelligently" if that makes sense. I am a math major and I can use my brain to solve complex math problems?

Just like an engineer could solve some problem related to his/her discipline... etc.

I'm a mathematician. A philosophy buddy of mine from college and I like to get drunk and talk about what we think intelligence is. We have came to the conclusion that intelligence is a mixture of the ability to quickly adapt to new situations as they present themselves, and the ability to utilize logic and reason. All these sensible answers that have been given so far are only WAYS that a system can use to process a lot of information.

If we acknowledge this fact, then we can say that any computer program is artificial intelligence. Even the most basic computer programs are intelligent, in Ancient Greece, only "smart people" would be able to do simple arithmetics, now any fucking calculator can. Nowadays super-computers can beat the best chess players of our time.

Obviously, the ability of a given system to process information strongly depends on the way information is presented to it. For example, humans are very good at image processing and at handling concepts and words, but they have a hard time with large numbers. On another hand, computers are good at number crunching but our algorithms for image processing and language comprehension are quite limited for now. We can even push the comparison further and compare humans between them, some humans are better than other at maths, while some have better social skills. Similarly, some computers can deal very well with sound signals when other are better with 3D computation or number crunching.

It all comes down to how a brain, a processor or even an analog circuit can process the information it is given.
