Time for a nice, relaxing brainstorm session.

You are given the task of building a martian colony to support 30 humans for 20 years. You are to settle in the shadow of Mount Penor, overlooking an ancient riverbed that was shown to have an underground water reservoir beneath it. You have been given a species of genetically engineered lichen that can thrive on Mars without support other then watering and fertilizing, but it tastes like ass. What would you do?
