Basically around about 2000 years ago the jews stopped farming to get higher paying jobs in cities basically en mass due to the fact that literacy is an obligation of the Jewish faith. Education of this type wasn't really a good investment back then even with higher paying jobs in the cities, it was still too time and money intensive to go learn to read and write, but Jews had to do it for their religion. So for the next couple thousand years up until maybe the 19th century they were ahead of everybody else in terms of fraction of population literate. The momentum of this culture still keeps them well represented in education requiring fields.

Jews have a superior intelegence because of their genes.

My guess is that, in the predominately Christian West, Jews were the ones able to collect interest on loans (it's a sin for Christians), so they had a monopoly on investments and banking. Wealth leads to better education and more free time. Better education and more free time leads to either philosophy or science.

Also, the literacy rate for any era before the Renaissance is pointless when debating why successful Jews are so prevalent in science, considered science as we define it barely existed back then.
