There are quite a few toys that simulate this effect, OP.

I remember an opaque blue rubber ball filled with a bright yellow fluid. When you squeezed the ball, it would form a bubble. This bubble would stretch the blue rubber so thin as to make it transparent, and so the bubble would be bright yellow.

Also, applying pressure to liquid crystal displays (both monitors and old calculators) will often result in a local color change.

Some diacetylene based polymers also change from red to blue under stress and there are also piezochromic liquid crystals.

I don't know if there are any commercially available piezochromic materials though. Most materials require very large stresses before color changes occur.
