The water looks hollow when he pulls it up

Also, you can't get water to spin that fast by simply twisting it

If the water was spinning, it wouldn't be held inward -- not at the speed shown in his video.

Basic fucking statics, water molecules do not have enough surface tension to hold their shape.

A few things worth mentioning: gravity is still acting on the spinning water molecules; therefore those on the bottom would have to support the weight above them. What's happening to those molecules on the very bottom? The must be in contact with the table, in which case they'd quickly lose momentum through friction and the whole thing would collapse due to torsion. There are many reasons why this wouldn't work. Camera trickery can be quite good.
