If you need a good reference manual for minerals, this is about as good a basic book as you can find. It was used in my undergrad mineralogy class as the textbook, and as a graduate student, I still reference it fairly often.

Psychology is a 'good' degree to use if you're planning to transfer to a university from a CC.
Take entry level courses, transfer to your target college, then just "change" your major once you're there. Had a friend who did that with a UC. Just take the majors component for the hard science classes and it shouldn't be a problem.
