There were a lot of writings and editions of the books now in the bible floating around at the time. Gnostic texts and other apocrypha are also left out of the new testament. The canonization of the books that actually are in the new testament were voted on by humans. Don't even get me started on all the different English editions that are now in print. If you think the bible is long, try reading the Mahabharata.

New Testament was seriously editied. The King James Version in common use today was significantly modified in an attempt to both downplay it's connections to Catholicism and isolate Puritans. Changed with a political purpose in mind. this is obvious to anyone who has studied history.
