Mix cornflour and water, makes a non-Newtonian fluid - it becomes firm under pressure, but is otherwise liquid. Add water to the cornflour, not the other way around, and add it slowly otherwise you dilute too far.

Sodium acetate is an interesting one, you've already done half of it, but it's slightly awkward to prepare in the kitchen alone.
