What might be the simplest way to disable the motor in my room mate's humidifier without causing noticeable change to it?

Open it up. Find the wires leading to the motor. Make sure all power is off and disconnected. Remove a wire. Do not cut, unplug and take the wire whole. Close it all back up and return everything to the original state, sans wire you have taken. Get rid of that wire, flush it down a toilet, you never heard of it. Enjoy your higher electric bill from heating and air conditioning.

OP, everything in there will be connected by wire nuts that crimp on. The wires will probably be bunched together with zip ties. You could simply yoink one of the wires out of one of those wire nuts, and leave it free. Yoink a black or a white wire. The colored wires in mine correspond to different fan speeds, and pulling one will only disable one speed.

Or, there is one other sort of connection in there. The mechanical humidity sensor/switch has metal tabs on it, with those scroll shaped plugs fitting over them. (I don't know what that type of plug is called.) Anyway, you can pull either of those free and the sensor will never call for more moist air.

If discovered, either disconnect can be attributed to lazy assembly or vibration.
