So, if this is a rough model of the Earth and its relation to heavenly bodies, then why does the sun appear the same size in the sky at noon as before sunset, rather than shrinking into the distance?

But it does change size.
Take a picture with your phone of the sun at midday. Then take a picture at sunset. Compare the two. The sun is much smaller at sunset than at midday.
