The mechanism is entropy. It certainly does happen, just not anywhere within our visible universe, at least if we infer that the cosmos is infinite as well. Whether it actually is or not doesn't really change the answer as to mechanism though.

And you act like there isn't a very diverse array of assumptions underlying what numbers go into the model.

Therein lies the problem. You think the model hardcodes things it does not, and is therefore falsified because the hardcoded figures are wrong. So you don't know the first thing about anything and probably can't do math.
