It would make sense to say humans are bipedal, because those that are not have birth defects or had accidents. The species is bipedal. And has two sexes/genders. The one that produces sperm, and the one that produces eggs. The fact that some humans can't is due to birth defects.

If we only had bipedal humans, we would remain the same species. If we only had people who can produce eggs and those that produce sperm, we remain the same species.
