Chickens (broilers) already grow so fast that their bodies malfunction from the metabolic strain. Predominantly heart attacks, muscle death (a failure of adequate blood supply to develop), clotting; doing the same to cows would be counter productive.
Cancers may grow fast but they always grow inefficiently; they put a huge metabolic strain on the body, they disrupt the surrounding tissues, whatever tissue has become cancerous is largely non-functional or functioning abnormally (often increasing the strain on the body).
