90% of serotonin in our body is produced by the GI tract, does this serotonin have any influence on the serotonin produced by the central nervous system?

How is the 1-2% of our body's serotonin produced in the CNS?

I've seen hundreds of articles pertaining to how diet influences depression and etc but never seen the connection.

Wikipedia states that the serotonin in the GI tract just controls intestinal movements,

Does diet affect mood? If so, by what process?

Im not quite sure what the mechanism is. One theory is that it is the gut microbiome that influences mood. Like if you have sugar cravings, it can be the bacteria excreting substances that make you crave sugar, while in reality its the bacteria that wants it.
