There are many, many studies showing vitamin supplements have no benefits, whereas food does.

The reason is very simple. What you're taking in the pill are the minerals by themselves. In food those minerals are wrapped around cofactors.

Bioavailability is useless as a metric since how much your gut absorb isn't the only thing that matters. It also matters how much of it your body can actually transport, how much your cells can uptake, how much of what they uptake can they utilize.

Nutrition science is hopelessly lost for many reasons (mainly the difficulties with designed valid experiments that can be used to infer causality, those being the well powered, well controlled, randomized double blind trials) and will never get good answers though.

The only place I have found this is ironically in places where it is considered a lie.
