Evolution on that scale occurs over such a large period of time, it is almost impossible for a person to observe.

I mean... we have histories going back what, 3000-4000 years? Evolution takes place over millions of years...

actually, in "a farewell to alms" it is proposed, based on recent studies on genedrift in rats during only a couple of generations, that given a strong selective pressure, evolution can occur inside only a few centuries...
