In the problem of matter/antimatter symmetry, the answer lies yet again in the antrhopic principle.
We can only witness an antisymmetrical universe, because we can only exist in one. So even though the existence of a universe like we observe is highly unlikely, at the same time we are bound to find it the way it is.
So we can just assume that some type of statistical anomaly made it such that there is a lot of regular matter in our observable universe. Most likely, far outside our observable universe we can expect there to exist an antimatter universe.

Take your image of mass spectrometry. It uses an electromagnetic field and determines charge/mass ratios by fixing that component of the interaction (reasonably well) and letting small differences of mass affect the trajectory. It's not gravity that's causing the bulk of the deflection.
In your experimental setup, you would have to have an EM accelerator and then a vacuum chamber COMPLETELY SHIELDED from EM, due to the difference in magnitude of the forces you're testing for.
