Why do you need depots? Each tanker can be parked in the desired orbit for the mission, fueled, and finally the actual starship to do the journey can get there to be topped off. Depots only complicate the entire thing because you have to place and maintain them everywhere. Single one is definitely not going to cut it unless it's optimal for one destination only and on top of that you need systems to for long term storage of fuels making it even harder.

There's no advantage to depots in the context of a single mission (to Mars, or anywhere else). But for long term, it makes sense to use depots because you can bunker propellant over multiple launches over a longer period, and then launch a bunch of flights during a given transfer window. Trying to do it without a depot would mean using way more Starships (that have to wait in orbit until they've given away their propellant), and most of them would be half empty. Then the actual mission vehicle might have to make multiple refuels before it goes, and any delays could mean (worst case) missing your window.
What we'll probably see is a slow evolution: first mission to Mars will be depotless, each tanker flying up and refueling independently. Once cadence picks up, you'll have a few dedicated "depot tankers" that stay in our permanently to take on propellant from other tankers and then refill the mission craft in one go. Finally, it'll start making sense to build a dedicated depot, which can have larger capacity and no need for launch/reentry hardware.

There is no good reason to ever use RP1 in a reusable vehicle. Hybrid ramjets are a thing, and you wouldn't need any switch to rockets with such a low first stage velocity. It would still be dumb, but the original concept is even dumber. RP1 is a terrible choice as fuel costs would be astronomical, engines would need to be taken apart every flight and you would never have the advantage of FFSC, and the aerospikes are entirely unnecessary as you don't have vacuum performance to be concerned about.

Cool to see a video on an emerging rocket company. The Alpha is pretty much just another rocket at this point, and though I'd love to see it succeed, I wonder what the long-term viability of it is. The Beta as currently presented would've been a good competitor to SpaceX and ULA a few years ago for medium-size satellites, but not really now. A chain of commsats could be built though to keep Earth in contact with Mars, some features of internet usage would be limited and especially at furthest approach it would be really shitty having to wait forty minutes for Earth to send you a video but it's not like communication is impossible.
